Ham & Veg Frittata

INGREDIENTS
- 1 teaspoon oil
- 1 leek chopped
- 1 large carrot coarsely grated
- 1 large Zucchini coarsely grated
- 120g ham or chicken chopped
- 4 eggs
- 5 egg whites
- 1 cup skim milk
- 80g low fat cheese
METHOD
- Preheat oven to 180ÂșC fan forced.
- Combine oil and leek in fry pan and cook for 2 minutes. Add carrot and zucchini and cook for a further 2 minutes until tender. Stir in the ham and then spread the mixture over base of tin
- Whisk eggs and egg whites and milk in a bowl and pour over veggies. Sprinkle with cheese. Bake for 30 minutes or until mixture has set.
