Quick, One Pot Beef Casserole

This low carb, low fat meal is ready in under 25 minutes. A recipe the entire family will enjoy. For a more filling meal serve on a bed of zucchini noodles, cauliflower rice or konjac noodles.

Serves 4

Ingredients:

  • 500g lean mince
  • 1 onion
  • 3 stalks diced celery
  • 1 diced capsicum
  • 3½ cups diced tomatoes
  • 2 small carrots
  • 3 zucchinis grated
  • 1 cup water
  • Paprika, salt and pepper to taste

Method

  1. Brown the mince in a large fry pan or saucepan.
  2. Add all other ingredients EXCEPT the zucchini and simmer over a low heat for 20 minutes
  3. Add the zucchini and continue cooking until zucchini has cooked and mixture has thickened. Adjust with extra water if needed.
