Quick Veggie Frittata For One

Ingredients
- 250g frozen mixed vegetables
- 2 eggs
- 1 egg white
- 1/3 cup skim milk
- 1 tablespoon + 1 teaspoon 50% reduced fat grated cheese [I use Coles Light Mozzarella]
- 1 tsp dried mixed herbs
Method
- Preheat oven to 180°C.
- Spray a 2 ¼ cup capacity baking dish with oil and cook veggies in microwave according to pkt directions. Cool.
- Whisk eggs, egg white, milk and 1 tablespoon of the cheese in a bowl, add the veggies and the herbs and pour into the baking dish. Sprinkle with remaining teaspoon of cheese and bake for 25 minutes or until set.
