Smoked Chicken Pasta

This super quick low fat, low carb, healthy meal is one that the entire family will enjoy and will be ready in just minutes. It is a complete dish but do add a side salad or serve of vegetables for a filling meal.

Ingredients

  • 500g zucchini noodles or Slendier Pasta
  • 2 teaspoons olive oil
  • 2 teaspoons garlic infused oil
  • 1 x 200g fillet smoked chicken sliced
  • 2 large handfuls baby spinach leaves
  • 2 tablespoons pine nuts
  • ¼ cup grated parmesan
  • salt and pepper

Method

  • If using Slendier pasta, rinse and drain. Add the 2 teaspoons of olive oil to a fry pan and add the drained Slendier pasta or the zucchini noodles and heat through. Remove from heat, cover to keep warm and set aside.
  • Heat the garlic infused oil in fry pan and sauté the chicken, spinach and pine nuts until spinach has wilted and the chicken and pine nuts are golden brown. Add the pasta and parmesan cheese and toss over medium heat until the cheese has melted. Season to taste.
