Vegetable Ratatouille
Recipes > Carb Free MealsThis super quick, low carb, low fat, low calorie dish would make a terrific lunch mixed with a tin of fish or a super nice accompaniment to a steak or chicken or fish for dinner.

Ingredients
- 1 teaspoon oil
- 1 garlic clove crushed
- Half an onion
- Half a capsicum diced or sliced
- 2 mushrooms diced or sliced
- Half a zucchini diced or sliced
- 1 eggplant diced or sliced
- 1 cup passata
- ΒΌ cup fresh basil
- 1 tablespoon tomato paste
Method
- Mix together the passata and tomato paste
- Fry the vegetables in the oil until soft - just a few minutes.
- Pour passata mix over the vegetables and simmer for a further few minutes
- Add the basil and serve
