Apricot Oatmeal Cookies

These cookies are not only low fat they are low GI and a healthy option for morning or afternoon tea. Very simple to make.

Ingredients

  • ½ cup plain flour sifted
  • 1 teaspoon baking powder
  • 1 ½ cups rolled oats
  • ¼ cup brown sugar
  • 30g dried apricots chopped
  • 185g banana pureed
  • 1 tabs light margarine melted
  • 2 tabs honey
  • 1 tsp vanilla essence

Method

  1. Place oats, sugar, flour and baking powder into a bowl and mix to combine.
  2. Add the remaining ingredients and mix well
  3. Place tablespoons of the mixture onto non stick baking trays and bake for 8-10 minutes or until cookies golden but still soft. Place on a wire rack to cool
