Chicken and Vegetable Laksa Soup

Serves 6
Ingredients
- 500g chicken breast fillets
- 1 teaspoon oil
- 1 red onion
- 2 teaspoons lemongrass
- 1 teaspoon fresh red chilli
- 1 teaspoon mince ginger
- Half teaspoon ground turmeric
- 1 tablespoon chicken stock powder [I use Maggi]
- 1 litre water
- 1 packet zucchini noodles or Konjac noodles
- 1 bunch broccolini
- 1 red capsicum
- 1 carrot
- 375ml carnation light and creamy coconut evaporated milk
- 1 teaspoons fish sauce
Method
- Spray a large saucepan with oil, add the onion and cook over low heat for 3 minutes, until soft.
- Add the lemon grass, chilli, ginger and turmeric, and cook stirring for 30 seconds.
- Add the Chicken Stock Powder and water and bring to the boil.
- Add the chicken and vegetables then simmer uncovered for 5 minutes, until vegetables are just tender and chicken is cooked through. Add the zucchini noodles [if using konjac noodles rinse first]
- Stir in Nestle CARNATION Light & Creamy Coconut Flavoured Evaporated Milk and heat through.
- Stir in MAGGI Fish Sauce and serve immediately
