Mexican Vegetables

Serves 2

Ingredients:

  • Oil spray
  • ½ medium onion diced
  • 1 clove garlic crushed
  • ½ red capsicum
  • 2 diced mushrooms
  • Half a zucchini sliced
  • 1 tomato diced
  • 4 florets cauliflower chopped finely
  • 1 tablespoon taco powder
  • 125ml water
  • Salt and pepper to taste

Method

  • In a non-stick pan cook the vegetables including the garlic until slightly soft. Add the taco powder and season with salt and pepper, add the water. simmer for a few minutes or until cooked to your liking.
