Oat & Apple Muffins

These low GI, low fat muffins are high in fibre and make for a super healthy morning tea or afternoon tea. They are just as lovely whether they are served warm or cold.

Ingredients

  • ½ cup All-Bran cereal                     
  • 2/3 cup low fat milk
  • ½ cup self raising flour                  
  • 2 teaspoons baking powder
  • 1 teaspoon mixed spice                
  • ½ cup unprocessed oat bran
  • 1 & ½ green apples, peeled and cut into 5 mm cubes
  • 1 egg lightly beaten                        
  • 1 teaspoon vanilla essence


Method
1. Preheat oven to 180°C.

2. Combine the All-Bran and milk in a bowl and let stand for 10 minutes

3. Sift the flour, baking powder and mixed spice into a large bowl. Stir in the oat bran & apple

4. Combine the egg and vanilla essence and all mixtures together. Stir with a wooden spoon until just combined – do not over mix

5. Spoon the mixture into a greased 12-hole muffin tray and bake at 180°C for about 15 minutes or until lightly browned and cooked through

Serves. Recipe makes 12. One per snack
