Chicken Casserole

This is a terrific low carb, low fat dinner that the entire family will enjoy. For a more filling meal serve the casserole on zucchini noodles, cauliflower rice or konjac pasta.

Serves 4

Ingredients

  • 2 boneless chicken breasts                         
  • 2 teaspoons olive oil
  • Dash garlic power
  • Dash salt and pepper
  • 1 small zucchini
  • 1 medium tomato diced
  • ½ tsp basil
  • ½ tsp oregano
  • 2 tablespoons low fat shredded cheese

Method

  1. Butterfly slice each chicken piece in half to make 4 thin pieces
  2. Season with garlic powder, salt and pepper and brown on each side in olive oil about 2 to 3 minutes per side. Place in a medium baking dish
  3. Sauté the zucchini in the same pan until soft. Add diced tomato, basil and oregano and season with salt and pepper. Cook an additional 2 minutes then pour over chicken
  4. Bake in the oven at 180° for 20 minutes. Top with the cheese and bake for a further 5 minutes.
