Chicken Casserole
Recipes > Main MealsThis is a terrific low carb, low fat dinner that the entire family will enjoy. For a more filling meal serve the casserole on zucchini noodles, cauliflower rice or konjac pasta.

Ingredients
- 2 boneless chicken breasts
- 2 teaspoons olive oil
- Dash garlic power
- Dash salt and pepper
- 1 small zucchini
- 1 medium tomato diced
- ½ tsp basil
- ½ tsp oregano
- 2 tablespoons low fat shredded cheese
Method
- Butterfly slice each chicken piece in half to make 4 thin pieces
- Season with garlic powder, salt and pepper and brown on each side in olive oil about 2 to 3 minutes per side. Place in a medium baking dish
- Sauté the zucchini in the same pan until soft. Add diced tomato, basil and oregano and season with salt and pepper. Cook an additional 2 minutes then pour over chicken
- Bake in the oven at 180° for 20 minutes. Top with the cheese and bake for a further 5 minutes.
