Lamb Curry
Recipes > Main MealsThis super easy, low carb dish is one that the entire family will enjoy. Serve on a bed of zucchini noodles or cauliflower rice for a terrific, filling meal.

Ingredients
- Oil spray
- 1 onion, diced
- 2 cloves garlic, crushed
- 500g diced lamb
- 2 tablespoons curry powder
- 1 ½ cups water
- 440g can crushed pineapple in natural or light juice
- 2 cups shredded cabbage
- 2 tomatoes, chopped
- ¼ cup fruit chutney
- Salt and Pepper
Method
- Cook onion and garlic for two minutes in large saucepan with a spray of oil. Add lamb and curry powder and stir until brown.
- Pour in water and bring to boil, reduce heat and simmer for 30 minutes
- Add remaining ingredients, season with salt and pepper and heat through until cabbage has wilted.
