Zucchini Slice

This super low fat zucchini slice makes for the perfect morning or afternoon snack otherwise team up with a side salad or vegetable soup for a light lunch.

Serves 4

Ingredients

  • 650g zucchini, grated
  • 1 onion, sliced
  • 4 rashers bacon or ham chopped
  • ½ cup low fat grated cheese
  • 1 cup self raising flour
  • 2 eggs
  • 2 egg whites

Method

  • Preheat oven to 180°C. Spray a lamington tin with cooking oil.
  • In a large bowl combine the zucchini, onion, bacon/ham, cheese and flour
  • Beat together the eggs and egg whites. Stir into the zucchini mixture and press into the prepared tin and cook for 30 to 40 minutes until firm and golden. Cool completely and serve.
