Mexican Vegetables
Serves 2
Ingredients:
- Oil spray
- ½ medium onion diced
- 1 clove garlic crushed
- ½ red capsicum
- 2 diced mushrooms
- Half a zucchini sliced
- 1 tomato diced
- 4 florets cauliflower chopped finely
- 1 tablespoon taco powder
- 125ml water
- Salt and pepper to taste
Method
- In a non-stick pan cook the vegetables including the garlic until slightly soft. Add the taco powder and season with salt and pepper, add the water. simmer for a few minutes or until cooked to your liking.
