Chicken Oat Loaf

This is such a simple and quick dish and one that my entire family will eat. I make two loaves, one for dinner that night with cooked veggies and another is for lunches the next day served cold with a salad. A family favourite. If I am honest I must tell you that I dont put in the onions, rosemary or parsley and it is still super yum!

Ingredients

  • 500g minced chicken breast                       
  • 1 cup rolled oats
  • ¼ cup skim milk                        
  • 1 egg beaten
  • 1 cup grated carrot                                         
  • 1 cup chopped mushrooms or any other vegetable [I use grated zucchini zucchini]
  • ½ cup sliced spring or brown onions       
  • 1 teaspoon dried rosemary
  • ½ cup chopped parsley

Method

  1. Combine all ingredients and press into a tin.
  2. Bake at 180C for around 45 – 50 minutes
