Chicken Oat Loaf
Recipes > Smaller MealsThis is such a simple and quick dish and one that my entire family will eat. I make two loaves, one for dinner that night with cooked veggies and another is for lunches the next day served cold with a salad. A family favourite. If I am honest I must tell you that I dont put in the onions, rosemary or parsley and it is still super yum!
Ingredients
- 500g minced chicken breast
- 1 cup rolled oats
- ¼ cup skim milk
- 1 egg beaten
- 1 cup grated carrot
- 1 cup chopped mushrooms or any other vegetable [I use grated zucchini zucchini]
- ½ cup sliced spring or brown onions
- 1 teaspoon dried rosemary
- ½ cup chopped parsley
Method
- Combine all ingredients and press into a tin.
- Bake at 180C for around 45 – 50 minutes
