Low Carb Cheat's Minestrone

This hearty, filling meal is ready in just minutes. Filling enough to be had as a complete meal or add a protein such as a steak, chicken or fish.

Serves 4

820g can tomato soup
1 pkt zucchini noodles and/or 1 pkt cauliflower rice
400g frozen mixed vegetables

Empty soup into a saucepan and add 1 ½ cans of water. Bring to the boil, add the vegetables, return to the boil and cook for 2 minutes. Add more water if the soup is too thick. Add the zucchini noodles and/or cauliflower rice. Cook for a further 2 minutes until all heated through. Serve
