Quick, One Pot Vegetable Bake
Recipes > Smaller MealsThis low carb, low fat, healthy dish is my go to lunch when I arrive home from work starving and need something super quick. Serve with a side salad or serve of vegetables for a main meal or add a tin of fish to the bake for a complete meal.
Ingredients
- 1 – 2 cups of frozen veggies
- ¼ cup Coles Light Mozzarella
- 2 eggs beaten
- ¼ cup skim milk
- 1 tablespoon flour
Method
- Combine all vegies in a bowl. Mix remaining ingredients and pour over vegies.
- Bake 30 minutes at 180°C
