Quick Tuna Mornay

This super easy dish is a lovely dinner served with a side of veggies and just as nice cold the next day served with a side salad. A simple, low fat, healthy option to traditional tuna mornay.

Serves 4


  • ¾ cup rice
  • 1 large tomato chopped roughly
  • 1 medium tomato sliced
  • 1 onion chopped finely
  • ¼ cup low fat grated cheese
  • 450g can tuna in springwater
  • 410g tin chicken soup
  • 2 teaspoons Parmesan cheese for topping


  1. Cook rice as per packet directions
  2. Preheat oven to 180°C
  3. Mix all ingredients except the tomato slices and Parmesan cheese if using.
  4. Place mixture into an oven proof dish and layer the tomato slices [and cheese] on top
  5. Place in oven and cook for 30 minutes
