Quick Tuna Pasta Salad

This is such a healthy, easy dish to make for lunches in advance. Cook four or five serves on a Sunday so your lunches are covered for the week.

Serves 1


  • 35g dried pasta spirals
  • ½ Lebanese cucumber
  • ¼ red capsicum, chopped
  • 1 small tomato, chopped
  • 95g tuna or salmon drained and flaked
  • 1 tsp olive oil
  • 1 tsp lemon juice


  • Cook pasta until just tender
  • Cut cucumber into quarters length ways and thinly slice
  • Combine all ingredients and serve.
