Quick Veggie Frittata For One

This is a terrific dish either on its own or served with a protein such as a piece of fish, chicken or steak. Ready in minutes it is low fat, low carb and healthy.

Serves 1


  • 250g frozen mixed vegetables
  • 2 eggs
  • 1 egg white
  • 1/3 cup skim milk
  • 1 tablespoon + 1 teaspoon 50% reduced fat grated cheese [I use Coles Light Mozzarella]
  • 1 tsp dried mixed herbs


  • Preheat oven to 180°C.
  • Spray a 2 ¼ cup capacity baking dish with oil and cook veggies in microwave according to pkt directions. Cool.
  • Whisk eggs, egg white, milk and 1 tablespoon of the cheese in a bowl, add the veggies and the herbs and pour into the baking dish. Sprinkle with remaining teaspoon of cheese and bake for 25 minutes or until set.
