Salmon Loaf

A very easy, healthy, filling recipe. Add vegetables for a complete dinner or serve cold with a salad for a very hearty lunch.

Serves 2

INGREDIENTS

  • 415g can red salmon
  • 1 small onion, diced
  • 1 cup skim milk
  • ¾ cup breadcrumbs
  • 1 tablespoon dried or fresh dill
  • 2 eggs separated
  • Salt and pepper

METHOD

Preheat oven to 200°C. Lightly spray a loaf tin with cooking oil

Drain salmon and crumble into a bowl. Add the onion, milk, breadcrumbs, dill and egg yolks. Season and mix well.

Beat egg whites until stiff and fold into salmon mixture. Pour mix into loaf tin, cover with foil and bake for 30 minutes. Remove foil and bake for a further 25 minutes
