Vegetable Stir Fry Rice

This is a super healthy alternative to the traditionally high fat fried rice version. Packed with vegetables this can be a stand alone meal or served with a protein such as a steak, chicken or fish

Serves 4

Ingredients

  • 6 eggs
  • 500g pkt Birds Eye Stir Fry Thai Style Veggies [frozen] [or any similar version]
  • 2 pkts 250g Uncle Ben’s Express Brown Rice [or any similar version]
  • ¼ cup soy sauce

Method

  • Whisk 6 eggs in a bowl. Oil spray a wok or large fry pan and over high heat add the eggs, cook, stirring, breaking eggs into smaller pieces until set. Remove and cover.
  • Stir fry the pkt of frozen veggies in two batches for about four minutes each. Add the rice and cook stirring for a further 2 minutes.
  • Return the egg with the soy sauce and cook for one minute.
