Vegetable Stir Fry Rice

Ingredients
- 6 eggs
- 500g pkt Birds Eye Stir Fry Thai Style Veggies [frozen] [or any similar version]
- 2 pkts 250g Uncle Ben’s Express Brown Rice [or any similar version]
- ¼ cup soy sauce
Method
- Whisk 6 eggs in a bowl. Oil spray a wok or large fry pan and over high heat add the eggs, cook, stirring, breaking eggs into smaller pieces until set. Remove and cover.
- Stir fry the pkt of frozen veggies in two batches for about four minutes each. Add the rice and cook stirring for a further 2 minutes.
- Return the egg with the soy sauce and cook for one minute.
