Apricot Oatmeal Cookies

Ingredients
- ½ cup plain flour sifted
- 1 teaspoon baking powder
- 1 ½ cups rolled oats
- ¼ cup brown sugar
- 30g dried apricots chopped
- 185g banana pureed
- 1 tabs light margarine melted
- 2 tabs honey
- 1 tsp vanilla essence
Method
- Place oats, sugar, flour and baking powder into a bowl and mix to combine.
- Add the remaining ingredients and mix well
- Place tablespoons of the mixture onto non stick baking trays and bake for 8-10 minutes or until cookies golden but still soft. Place on a wire rack to cool
