Banana Berry Loaf
Recipes > Sweet Muffins CakesThis is a delicious sweet, low fat snack. Great for morning tea or afternoon tea. Even nicer warmed slightly with a scoop of low-fat ice-cream served for dessert. Instead of a loaf you can make in a muffin tray for individual serves, however this will require less baking time.
Ingredients
- 2 cups plain flour
- ¾ cup sugar
- 1 teaspoon baking powder
- 1 ½ teaspoons bicarb soda
- 3 ripe bananas
- ½ cup oil
- 1 tablespoon skim milk
- 2 eggs, lightly beaten
- 1 cup fresh or frozen raspberries or Strawberries
Method
- Preheat oven to 180°C, line a loaf tin with baking paper
- Mix the flour, sugar, baking powder and bicarb soda in a large bowl
- Whisk the bananas, oil, milk and eggs in a separate bowl
- Add both bowls and stir gently until combined. Add raspberries and pour into loaf tin
- Bake for one hour or until skewer comes out clean. Leave cake to cool in tin for a few minutes and then turn out.
