Banana Berry Loaf

This is a delicious sweet, low fat snack. Great for morning tea or afternoon tea. Even nicer warmed slightly with a scoop of low-fat ice-cream served for dessert. Instead of a loaf you can make in a muffin tray for individual serves, however this will require less baking time.

Ingredients

  • 2 cups plain flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • 1 ½ teaspoons bicarb soda
  • 3 ripe bananas
  • ½ cup oil
  • 1 tablespoon skim milk
  • 2 eggs, lightly beaten
  • 1 cup fresh or frozen raspberries or Strawberries

Method

  1. Preheat oven to 180°C, line a loaf tin with baking paper
  2. Mix the flour, sugar, baking powder and bicarb soda in a large bowl
  3. Whisk the bananas, oil, milk and eggs in a separate bowl
  4. Add both bowls and stir gently until combined. Add raspberries and pour into loaf tin
  5. Bake for one hour or until skewer comes out clean. Leave cake to cool in tin for a few minutes and then turn out.
