Berry Muffins
Recipes > Sweet Muffins CakesThis is another muffin recipe that uses yoghurt instead of oil or butter making it a low fat, healthier alternative to regular muffins. Enjoy as a snack or warm slightly and add a scoop of low-fat ice-cream for a delicious dessert.
Ingredients
- 1 cup plain flour
- 1 cup wholemeal flour
- ¼ cup brown sugar
- 3 teaspoons baking powder
- 200g tub low fat yoghurt, plain, vanilla or strawberry flavoured
- 2 eggs lightly beaten
- ½ cup skim milk
- 1 ¼ cups frozen berries [I use blue berries]
Method
- Preheat oven to 180° C.
- Spray a muffin tin or a loaf pan with vegetable spray
- Combine flour, sugar and baking powder in a large bowl.
- Stir in eggs, yoghurt and milk until just combined
- Gently fold berries through
- Bake until skewer inserted comes out clean
