Berry Muffins

This is another muffin recipe that uses yoghurt instead of oil or butter making it a low fat, healthier alternative to regular muffins. Enjoy as a snack or warm slightly and add a scoop of low-fat ice-cream for a delicious dessert.

Ingredients

  • 1 cup plain flour
  • 1 cup wholemeal flour
  • ¼ cup brown sugar
  • 3 teaspoons baking powder
  • 200g tub low fat yoghurt, plain, vanilla or strawberry flavoured
  • 2 eggs lightly beaten
  • ½ cup skim milk
  • 1 ¼ cups frozen berries [I use blue berries]

Method

  • Preheat oven to 180° C.
  • Spray a muffin tin or a loaf pan with vegetable spray
  • Combine flour, sugar and baking powder in a large bowl.
  • Stir in eggs, yoghurt and milk until just combined
  • Gently fold berries through
  • Bake until skewer inserted comes out clean
