Flourless & Oil Free Strawberry Muffins

These healthy muffins use oats rather than flour and yoghurt in place of oil making for a super low fat muffin. Delicious for morning tea or afternoon tea otherwise warm slightly and serve for dessert with a scoop of low-fat ice-cream.

Makes 8 to 10 muffins

Ingredients

  • 2 ½ cups rolled oats
  • 200g Lactose Free Plain Yoghurt
  • 2 eggs
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • 250g strawberries, hulled and diced

Method

  • Preheat oven to 180°C degrees
  • Spray a muffin pan with oil spray.
  • Place all ingredients, except the strawberries, in a blender or food processor and blend until the oats are smooth.
  • Pour mixture into a bowl and stir in the strawberries and divide batter into the muffin tray.
  • Bake for 20 – 25 minutes or until a toothpick comes out clean.
