Flourless & Oil Free Strawberry Muffins
Recipes > Sweet Muffins CakesThese healthy muffins use oats rather than flour and yoghurt in place of oil making for a super low fat muffin. Delicious for morning tea or afternoon tea otherwise warm slightly and serve for dessert with a scoop of low-fat ice-cream.
Makes 8 to 10 muffins
Ingredients
- 2 ½ cups rolled oats
- 200g Lactose Free Plain Yoghurt
- 2 eggs
- ¼ cup sugar
- 2 teaspoons baking powder
- 250g strawberries, hulled
and diced
Method
- Preheat oven to 180°C degrees
- Spray a muffin pan with oil spray.
- Place all ingredients, except the strawberries, in a blender or food processor and blend until the oats are smooth.
- Pour mixture into a bowl and stir in the strawberries and divide batter into the muffin tray.
- Bake for 20 – 25 minutes or until a toothpick comes out clean.
