Flourless Strawberry Muffins

These low fat, low GI flourless muffins are super healthy and very easy to make.

Makes 8 to 10 muffins

Ingredients

  • 2 ½ cups rolled oats
  • 200g plain or vanilla yoghurt
  • 2 eggs
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • 250g strawberries, hulled and diced

Method

  1. Preheat oven to 180°C degrees
  2. Spray a muffin pan with oil spray.
  3. Place all ingredients, except the strawberries, in a blender or food processor and blend until the oats are smooth.
  4. Pour mixture into a bowl and stir in the strawberries and divide batter into the muffin tray.

Bake for 20 – 25 minutes or until a toothpick comes out clean.
