Low Fat Chocolate Mud Muffins

These super easy to make, low fat muffins make for a super morning or afternoon snack, otherwise warm slightly and serve with a scoop of low fat ice-cream for a delicious dessert.

Ingredients

  • 1 cup self raising flour
  • ½ teaspoon baking powder
  • 4 tablespoons cocoa powder
  • ¾ cup sugar
  • ¼ cup skim milk
  • ½ cup low fat yoghurt
  • 2 egg whites
  • 1 whole egg
  • 1 tsp vanilla essence

Method

  1. Preheat oven to 180°C
  2. Sift flour, baking powder and cocoa then add sugar and mix to combine and stir in all other ingredients.
  3. Spoon mixture into a 12 muffin pan and bake for 15-20 minutes
