Tropical Muffins

These muffins make a nice change to the regular berry muffins. Great for a snack or serve warmed with some low fat ice-cream for dessert.

Ingredients

  • 1 ¼ cups wholemeal self raising flour
  • 1 ¼ cups white self raising flour
  • ¼ cup sugar
  • 2 tabs margarine melted
  • ½ cup skim milk
  • 1 egg, lightly beaten
  • 450g can tropical blend fruit salad
  • 1 teaspoon vanilla essence

Method

  1. Preheat oven to 180
  2. Sift flours and sugar and place into a bowl.
  3. In another bowl mix the margarine, milk, egg, fruit salad and vanilla
  4. Pour into the flour mixture and mix gently until combined
  5. Spoon into a 12 capacity muffin pan and bake for 30 minutes
