Pumpkin Muffins

These low fat, healthy muffins are just 120 calories each and just 1.5g of fat making them a perfect option for morning tea or afternoon tea. Otherwise team one up with a side salad or vegetable soup for a light lunch.

Makes 12

Ingredients

  • 2 cups Self-Raising Flour
  • ΒΌ cup skim milk powder
  • 1 cup pumpkin, grated
  • 2 tablespoons reduced fat shredded cheese, I use Coles Light Mozzarella
  • 2 eggs
  • 1 cup low fat milk
  • Black pepper to taste

Method

  1. Combine the flour, skim milk powder, pumpkin and cheese into a mixing bowl.
  2. Lightly whisk together the eggs, milk and pepper and add to the pumpkin mixture.
  3. Spoon into a non-stick 12 muffin tin and bake at 1800C for 25 to 30 minutes or until golden and cooked through. Turn out on a wire rack to cool
