Pumpkin Muffins

Ingredients
- 2 cups Self-Raising Flour
- ΒΌ cup skim milk powder
- 1 cup pumpkin, grated
- 2 tablespoons reduced fat shredded cheese, I use Coles Light Mozzarella
- 2 eggs
- 1 cup low fat milk
- Black pepper to taste
Method
- Combine the flour, skim milk powder, pumpkin and cheese into a mixing bowl.
- Lightly whisk together the eggs, milk and pepper and add to the pumpkin mixture.
- Spoon into a non-stick 12 muffin tin and bake at 1800C for 25 to 30 minutes or until golden and cooked through. Turn out on a wire rack to cool
