Salmon Bake
Recipes > vegetarianThis one pot dish is super easy to make and a lovely, filling dish for either lunch or dinner. Serve with salad or veggies.
Serves 4
Ingredients
- 2 medium potatoes, grated and excess moisture drained
- 1 large carrot, grated
- 1 medium zucchini, grated and excess moisture drained
- Green part of 5 spring onions, diced or a tablespoon of chives
- 2 Tablespoons of lemon juice
- 3 eggs, lightly whisked
- 400g can salmon, drained
Method
- Pre-heat oven to 180° degrees and line a square cake tin with baking paper.
- Combine all ingredients thoroughly and transfer to prepared cake tin.
- Bake for 25 to 30 minutes.
